Grilling outdoors is fun, and easy. Some people are choosing to design and install their own backyard kitchens. And while this fully equipped option is nice, it is not necessary and some are choosing simply to install drop in grills. For those who have not owned a grill in a long time, or for those purchasing one for the first time, there are a few things to consider.
The first decision is whether to buy a gas grill or a charcoal grill. Some prefer the quick and hot heat from a gas grill, and the easy clean up. However others prefer the smokey flavor of the food cooked over the charcoal flame, for while as stated the gas will cook food quicker, but nothing beats the flavor of vegetables and meat cooked over charcoal or mesquite briquettes.
There are varieties of charcoal that will burn hotter, such as natural chunk, and this is a great option for the searing of meat cooking on the grill. An important aspect of the outdoor cooking, is to keep the grill clean. While a layer of residual smokiness will enhance the flavor, too much can be dangerous and toxic. One way to ensure that there is no food particles left on the grill from a previous cookout, which could cause cases of food poisoning, is to heat the grills over the flames of the charcoals, then brushing them off with a wire grill brush.
Another sanitation concern, and one that many have seen no doubt throughout years of family barbecues, has to do with the uncooked food versus the cooked food. Many times people will carry out a plate of hamburgers, cook them on the grill, only to put them back on the plates the uncooked meat had been carried out on. This is a sure way to make someone sick, if not all the guests at the party. One must be aware of the proper food handling techniques when grilling outdoors.
